If you have a document camera here is a trick I like to use. I have pencil boxes around the room that have scratch paper that I quartered. I have students write their name on the back and do a problem on the front (I teach math, but could do with anything).

I have students hold the paper up in the air to make sure I get one from everyone.

I then shuffle the papers and put them under the document camera. Names are on the back so I am not embarrassing anyone. This allows everyone to see what students did right and how to improve.
